Simple Stuffed Chicken Breast

But I didn't have cream cheese or green onions. I did have garlic & herb chevre and a shallot, so I substituted.
Preheat oven to 375 degrees.
1 chicken breast, pounded out to 1/4 inch thickness (about 6 oz)
1 oz chevre
1 tbsp shallot
2 slices applewood smoked bacon, partially cooked
dash of salt
After pounding the chicken, salt it a little. Then put the chevre and shallot on the back side. Roll it up, wrap it in bacon, and secure bacon with toothpicks. Place in an oven proof dish (I used parchment paper in my dish). Put dish in a 375 degree preheated oven for 30 minutes. After thirty minutes, put the oven on broil and let cook for an addition 3-5 minutes, until bacon is crispy.
