Baked potato and chicken casserole (happens to be low FODMAP!)

This is not the most nutritionally balanced meal, but it sure makes a tasty indulgence. 4 servings.

Ingredients:
  • 1-1.5lb Yukon gold potatoes, diced to about 1/2" cubes
  • 1 lb boneless skinless chicken breast, raw and diced into 1/2"-3/4" cubes
  • 1-1.5 cups shredded sharp cheddar (that's about 100-150g)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp poultry seasoning
  • 4 strips bacon, raw
  • 1/2 cup milk or cream (use lactose free if needed)
  • 1 tbsp flour (use GF if needed)
  • 1 tsp Dijon mustard (optional)

Directions:
  • Preheat oven to 350F and spray a 9"x7" or 8"x8" pan with nonstick spray. You want the pan to be at least 2.5" deep, I'd guess.
  • Pan fry the bacon until very crispy. Remove from pan and drain on paper towel lined plate. Retain 1-2tbsp of the bacon fat. Once the bacon has cooled, crumble it into small pieces.
  • Parboil the potatoes: place diced potatoes into a pan and cover with water so there is about 1" water above the potatoes. Season with a pinch of salt. Bring to a boil and then reduce to simmer for about 6-8 minutes.
  • Whisk the flour, dijon mustard, retained bacon grease (1-2 tbsp), and poultry seasoning into the milk and set aside.
  • Add half the chicken, half the parboiled potatoes, and half the bacon crumbles to the casserole dish. Season with salt and pepper. Add half the cheese.
  • Repeat the previous step to assemble the second layer, except do not put the cheese on.
  • Pour the milk mixture over the casserole, using your fingers to distribute the bacon fat over the top if it has solidified.
  • Bake, covered (with tinfoil or casserole dish lid) for 1 hour.
  • Top with the remaining shredded cheddar, and bake for another 20-30 minutes. Enjoy!

There's a lot of room for variation in nutritional info, but when I made this tonight, one serving came out to 434 cal, 19g fat, 36g protein, 27g carb. It was really dang tasty. You could definitely garnish with some green onions as well!
