Acorn Squash

I bought an acorn squash tonight. I've never cooked with one. Anyone have any recipes they like?

    I love acorn squash. I usually just cut it half, scoop out the seeds and bake it in a water bath for approx. 30 minutes at 350. Add butter and nom.

    I quarter it, remove seeds, add honey, pecans or walnuts and dried cranberries. Then bake until tender.
    Or cube it cook in the microwave and add to my scrambled eggs in the morning.

    Cut it in half, cut side down on some parchment paper and roast in oven till tender. Then, mic a little brown sugar and butter, and spread on cut side. Turn cut side up and put under broiler for a few minutes until caramelized. Can be served as is, or with applesauce or maple syrup or stuffed with anything else you like.

    I like to cut it in half, or quarters if it's big, and stuff the cavity with a filling of peeled apples, cinnamon, sugar and brown sugar. Pop it in the oven for 15-20 minutes, depending on how big it is and how hot your oven cooks, then enjoy! Don't eat the skin though!

    Any winter squash can be made into soup, too. Mash or puree it & add broth as needed for the right consistency. I like it with some pureed unsalted pepitas or sunflower seeds, caramelized onions, garlic, chipotle peppers, pureed white beans. Or maybe fresh or dried sage leaves pureed in, instead of the chipotle. Or you can do spices like in a mulligatawny soup (curry powder to keep it simple, or individual curry-type spices if you like complex) plus apples (pureed or cooked chunks, or both) and onions. Or cinnamon/nutmeg and apples.

    Clearly, I could go on and on. TL; DR: It makes good soup. Experiment with flavors.

    We wash it and put it whole either in the crock pot or the oven.

    Yes stuff it with turkey sausage cheese spinach and quinia or brown rice then thank me later

    I like it cut in half, rubbed with olive oil, fresh cracked salt and pepper, and usually a little sage - roasted.

    My daughter likes when I put a pat of butter and a bit of maple syrup in the cavity when I roast.
