Quiche with sweet potato crust

Yum. Slice two large sweet pototoes very thin (you'll need a slicer). Spray a pie tin with spray oil and line the slices in the pan two or three deep. Bake at 350 for 25 minutes. Remove from oven, set aside, and increase oven temp to 375. Sautee onions, fenel, artichoke hearts, 3 cups of fresh spinach in non stick pan and pour into pie crust. Mix 4 eggs with 1/2 cup fat free milk and pour over veggies. Top with 1/2 cup low fat feta and place in oven for 35-40 minutes. The best thing about this recipe...other than it's delicious, is you can add veggies you like- mushrooms, peppers, etc. Enjoy!!

    What is the calorie count per serving on this? I usually do mine without any crust at all and use liquid eggs.

    The entire quiche is about 800 calories if you don't use any oil. So it depends on how you slice it :-)

    Yep...it is SO good!!! The sweet potatoes don't add much in calories, and really makes all the difference. Plus, it's quick.

    I've done it with regular potatoes and it was super tasty! I did miss the crunch of the crust though.

    You want crunchy crust? Easy. Shred you potatos and press into a bottom of oil sprayed baking tin. Bake in the oven unil done. Then add all the rest of the stuff and bake again.

    Would that really work? I mean, it's hard to get crispy fries when I roast them already... even if I make sure to pat them dry first!

    Actually, the sweet potato crust gets crispy on the edges because you bake it first before adding the other ingredients...then it gets baked again.
