I have a little waffle iron that makes 2 waffles, so I've been working on a single-serving recipe. Here's one that works really well for me - so light and fluffy (beating the egg white separately is key!)
Waffles (one serving)
Ingredients:
1 egg, separated
Pinch cream of tartar (optional)
1 Tbs butter, softened
2 tsp brown sugar
1/4 cup whole wheat flour
1 Tbs cornmeal
1/8 tsp baking powder
1/8 tsp baking soda
2 Tbs buttermilk (use sour cream, yogurt, or regular milk if you don't have buttermilk on hand)
3 Tbs milk
Pinch salt
Splash vanilla extract
Equipment:
Waffle iron
Hand mixer
2 bowls
Directions:
1. In one bowl, beat the egg white and cream of tartar until soft peaks form. Set aside.
2. In the second bowl, beat the egg yolk, butter, sugar, salt, and vanilla until blended. Add the flour, cornmeal, baking soda, baking powder, and buttermilk. Mix together until smooth. Add milk, one tablespoon at a time, until the batter thins out enough to pour. (I ended up using about 3 Tbs of milk, but you may need more or less depending on how "dry" the flour is.)
3. With a scraper, fold the egg white into the batter mixture until combined.
4. Cook in waffle iron according to the manufacturer's directions.
