Finally! Crispy Sweet Potato Oven Fries!

After many, many experiments with sweet potato oven fries to get them crispy on the outside, a solution! Buttermilk powder!

Just this.
-Peel the sweet potato and cut into thick fries.
-Shake in a bag with a couple tablespoons of buttermilk powder.
-Shake off any loose powder and place on a cookie sheet lined with parchment paper (or fight with the stickiness).
-Optionally, spray with a bit of olive oil spray.
-Bake in a pre-heated 400F (205C) oven for 10 minutes.
-Flip each fry. Bake a second 10 minutes (20 minutes total).
-Poke the fattest one with a fork. If it's soft they are done. If not give them a couple more minutes.
-Season with salt as desired.
