Vegan 5 ingredient tacos

Today i did meatless monday. I dont cook on mondays since my husband works nights so the kids and i have a pick what you want from our fridge day. They usually want frozen meals or noodles. And i usually eat left overs. But instead i went through my food and decided on some meatless monday tacos.

1 tbsp coconut oil
1 large sweet potato
1 large zucchini
4 oz soy chorizo
6 whole wheat fajita sized tortillas

This serves 2 people at 3 large tacos each 540 calories or it could serve 3 at 2 large tacos each.

Peel and chop potatoes to taco size pieces. Cook them in oil on medium high heat until slightly tender add chopped zucchini and cook until slightly tender add soy chorizo and cook until everything is cooked through. The soy chorizo will season everything but i do suggest some salt and pepper to taste.

These were quick easy and delicious. My family did not eat it since i was making it for myself as an experiment so i have half the mixture left over for a breakfast just needs some spinach and egg whites.

    And no i do not measure my food so my calories may be off from what you make.

    We make tacos with Beyond Meat Crumbles and a packet of taco seasoning. Tastes just like real meat.

    I havent tried those. We usually eat meat but i prefer soy chorizo so these turned out great. But this morming i used some of the mixture and added Eggwhites and spinach and it made the best breakfast bowl.
