Was kinda craving this yesterday so I made up a quick batch.
Ingredients:
1 lb 97/3 Ground Turkey
1 c. Minute Brown and Wild Rice
3 c. Tomato Sauce
4 tbsp Chipotle in Adobo Sauce
1 tsp sugar
1 tsp garlic
2 eggs
3 Large bell peppers
Chili Powder / Paprika / Garlic Salt to Taste
Mix turkey, garlic, eggs, seasonings, rice in a bowl and combine well.
Remove tops of bell peppers and get rid of white veins and seeds.
Stuff peppers religiously with ground turkey
Add tomato sauce, sugar, salt and pepper to taste, and chipotles to an oven pan (1-1/2 inch sides). Cover with foil and bake for 60-90 minutes at 350. After removing done peppers, reduce sauce to desired thickness. Garnish with cilantro and serve.
