When you start working out / doing a diet
I always hear that first you lose a good amount of liquid pounds, then it gets harder and harder because fat it takes more than liquid to lose. So that means that for the first few days u can lose more then 2 pounds a week?

Yes.
Our bodies shed and retain water continually based on changes in hormones, sodium/potassium levels, changes in elevation, etc. If you significantly change your eating habits when starting on a new diet you might certainly lose more than two pounds of water that first week or two especially if you're eating a lot less sodium than previously. It is just water, though.0
