At the end of the day, it's am estimate like just about everything else.

There are variations in the number of calories between different bananas, scales can give different weights, and and calorie calculators can be wrong. What matters is consistency

When I started using Fitbit, I ate half of my adjustments. I appear to be having luck with 70% of my adjustments. If that's off in a month, I'll adjust accordingly

I have it at that right now. Some people have more luck with higher levels, but it's something you need to play around with

My MFP is set to sedentary, and I eat back all the exercise calls Fitbit tells MFP to give me. I lose according to plan, sometimes more.

But you'll only know for sure how much you can eat back by tracking your numbers for 4 to 6 weeks. Be 100% accurate with your logging (weigh your food, choose the correct entries, etc) and compare what you take in, what Fitbit says you put out, and how much weight you lose. That'll let you know, better than anyone here can.
