Mexican food without lime, tomato sauce, or...

We love Mexican food (or maybe it's Tex-Mex, I'm not enough of a foodie to know) in our house. My kids love black bean and salsa quesadillas, breakfast enchilladas, tacos (of course)...

So I'd really like to try some more Mexican recipes, but I'm finding a hard time finding some that work for my family. Here are the criteria:
  • Healthy, of course.
  • No tomato sauce. Tomatoes are fine, but no canned diced tomatoes, tomato paste, etc. One of my kids really has an aversion to it. A small amount of salsa is fine, but not if that's the main taste that comes through.
  • No lime or lime juice. I'm allergic and I think one of my kids is too.
  • No meat or chicken. OR no dairy products. It can have one or the other, just not both. (We keep kosher.)
  • Relatively cheap. Fish is really expensive here, so that's probably out...

Any ideas?

    How about pozole soup ( it's got hominy, and your choice of beef or chicken or pork, whatever your personal family preference) and then you have the toppings of your choice.

    Or Albondigas soup (Mexican meatballs soup) .

    Maybe some fajitas too.

    Quesadilla with:
    Cheese
    Avocado
    Tomato

    I made this last night:

    2 tbsp olive oil
    Sliced carrots
    Sliced onions
    Cherry tomatoes, sliced in half
    Sliced bell pepper
    a few sliced green olives
    1 whole chipotle pepper
    Any other vegetables you like could probably also be added

    1 pound ground turkey
    1 tortilla of any kind, I like whole wheat or spinach

    Cook the vegetables separately from the turkey until they're soft (or slightly crunchy if you prefer that). Take the chipotle pepper out once the veggies are cooked.

    Cook the ground turkey and then pour in the vegetables.

    Warm the tortillas, then put the whole mixture inside

    Add Mexican seasonings to taste. I like these two mixed together:

    NPR did a segment on Foods of Michochuan a while back and this bean and tomato soup is like magic. We put the toppings at the table (you should be fine, it's kosher as soup is pareve, we do it with just water not broth and it's great). A big hit at our house. You can substitute for the ancho chile with a couple of charred jalapenos, a chipotle, or some chili powder if you have nothing else.
