Has anyone have any good recipes for Spiralizing Veggies? I just bought one last night and I'm excited to get started!

I Spiralize courgette (zucchini) into noodles and dry out a little on kitchen towel.
In a wok or large frying pan I use a little olive oil and gently fry off lots (to taste) or finely chopped garlic and chopped white onion. I then add a little white wine (about 1/2 glass) and reduce down before adding a good mix of mushrooms.
Cook down a little more, add a tub of 1/2 fat Creme fraiche and some Parmesan (if you like it) plus a few good grinds of fresh black pepper.
Remove the sauce from the pan, add in the noodles and cook briefly. Drain any extra liquid that they release and then add back in the sauce and mix together.
A luxurious, creamy "pasta" dish, that's filling and fits in around 500-600 calories for a good main plateful.1 -
I did beets last night. Tossed them with olive oil, balsamic vinegar and garlic powder and roasted at 425 for 10-15 minutes. They were really good!0
