Hi I'm trail running a vegan diet any vegans on here with any tips or recipes

I'm not vegan full-time but eat a vegan diet about 2-3 day a week. A couple of my favorite easy to make recipes are:
Chili
2 cups black beans cooked
2 cups pinto beans cooked
1 onion
1 bell pepper
2 cans tomato sauce
2 tbsp olive oil
Chili spices as desired
Salt to taste
4 cups brown rice
Chop and cook the onion and bell pepper in olive oil until mostly tender. Add all ingredients in a big pot except the rice. Cook until hot. Serve over brown rice. Makes about 8-12 servings.
Lentil Stew
1 bag lentils
1 onion
1 bell pepper
3 carrots sliced
1 cup cooked spinach
1 cup chopped black olives
4 tbsp olive oil
1 jar of your favorite barbecue sauce
4 tbsp vinegar
4 cups brown rice
Salt to taste
Chop and cook all the veggies in olive oil until mostly tender while boiling lentils and cooking the brown rice at the same time. Drain the lentils. Stir everything together, including the rice, in a big pot. Makes 8-12 servings.0
