I found this recipe on Pinterest and decided to tweak it to slash calories. Very tasty! The original recipe calls for less ground beef and to add bacon, but I didn't do bacon.
Ingredients:
-lean ground beef (I used about 42 oz)
-1 large yellow onion, diced
-2 cloves garlic
-3 dill pickles, cut into tiny, tiny pieces
-8 large eggs
-12 oz tomato paste
-1 cup fat free half n half
-12 oz 2% cheddar cheese (8 oz in one bowl, 4 oz in another)
-salt and pepper to taste
1. Preheat oven to 350F
2. Brown ground beef along with onion and garlic
3. Drain ground beef/onion/garlic and spread into a large casserole dish - mix in the pickles.
4. In a bowl, combine the eggs, tomato paste, half n half, and salt and pepper. This is a pain to whisk it to one uniform liquid, but do it anyways.
5. Add the 8 oz of cheese to the liquid/egg mixtures and stir.
6. Pour the egg/cheese mixture over the ground beef/onion/pickle mixture. Stir until beef is covered.
7. Top with remaining 4 oz of cheese.
8. Bake on oven for approximately 45 minutes.
9. Let cool and then divide into portions (I got 12 decent sized squares.
I thought this was super good! The egg cooked a little inside the concoction and it kind of reminded me of a hamburger bun and I was totally ok with it!
Obviously your calories will vary depending on how much of each ingredient you use (I weighed with a food scale!)
Enjoy!
