Going Paleo--Recipes please
My doctor would like me to go on the Paleo diet. She feels that this would be the best way to go to improve my health.
Paleo seems a bit daunting having recipes w/ so many ingredients and time consuming. Does anybody have any links for easy, quick options or is this not possible for this particular diet?

Did she get you an appointment with a dietician? I am not sure why a doctor would tell you this and then send you on your merry way. Geez.
The Paleo Diet has loads of rules and foods you are not supposed to eat. Maybe your doctor meant to say lower your carb intake?1 -

Thanks for the response. You're right, I think that a dietician who is familiar with this complicated diet would be helpful. She referred me to a website to get the necessary information, but I will check with her to see if this is even an option in my healthgroup.

I agree that it may help to find a dietician who is knowledgable, but I think it's cool that your doctor suggested it to begin with. I am on a modified Paleo diet for autoimmune disease, and it's made a huge difference! Once you get used to it, you'll realize that you start eating more variety than you ever did with the standard diet (this is coming from a former major skeptic). Meal planning and batch cooking makes it easier to succeed, just start by making super simple recipes (i.e. meatloaf with hidden vegetables, eggs/omelettes, crockpot/pressure cooker recipes). I'll be honest, it's incredibly overwhelming at first, and you will have to spend some money for staple items such as oils and spices to begin with. I promise that it does get easier after a while, and you will become an expert at meal planning and shopping for everything on sale.1 -
Agree with @Hamsibian - it gets easier.
You can't really go too far wrong with eggs for breakfast. A big salad with a lump of protein for lunch and a dinner which is a lump or protein and some vegetables (subject to the exclusions of this diet). Desserts - go for berries.
Start with some basic meals and gradually experiment with the more complex stuff as you gain experience.

For spices, check out a company called Spice Cave. They make spice blends that are paleo-approved [no artificial chemicals or preservatives, plus low sodium]. They make blends that revolve around whatever meat you're preparing, plus a few others [Land for beef/lamb/pork/etc, Sea for fish, Air for poultry, then there's Fire, Thai Blend and Mojo Blend].
My favorite spice from them has to be the Fire blend. It's kinda like smoked cayenne pepper. As for whatever salt is in the blends, it comes from pink himalayan salt slabs, so it's natural salt.0 -

Also if you cook chicken and top with tomato & cheese that's good too. I'm not sure if you're avoiding dairy in the true paleo spirit.
