The one time I tried, I was saddened by the amount of peanut butter I had to use to fill the celery grooves.. something like 3TBS/45g...that's 270 calories, then the raisins which are around 2 calories each. So, I decided it was better to have a couple oreos (40 cals each) or 1/2 ice cream (120 calories) for less calories.
Good for you if it works for you and you have the calories to do so, though!4 -
The best way to serve raw cerlery is to simply dip it in salt...
then throw it in the bin.

I like celery ... but it has to be nice a plump and juicy ... not the thin, stringy stalks that sometimes are all that's available at the store.
When eating it with peanut butter, you don't need to fill the cavity of the stalk with the spread. Just a thin smear will do it to give you a mouthful feel of peanut butter as you chomp.
When having a sandwich and you are wanting something with crunch to take the place of chips ... celery cut into thin strips about 3-4" tall are great. As are carrots cut into similar thin strips.
A saute of very thin celery, carrot (cut on the bias to get really lovely almost paper thin slices), and 1/2 an onion sliced into thin half-moons make a lovely base for eggs to steam poach in under a skillet cover. First soften the veggies over medium heat, then add the eggs and cover to cook until the eggs are done to your preference.
Another great thing to smear onto a stalk of celery is a bit of egg salad or cottage cheese.

Peanut butter is one of those foods you really have to be careful with. Eyeballing a serving often results in twice the amount of calories you thought. Even using a tablespoon measure can result in more than a serving. Best method is to put the jar on the scale, zero the weight, then scoop until you have removed the number of grams for your serving (32g for my jar). Bonus is that you get to lick the knife or spoon guilt free.3
