Buffalo chicken stuffed peppers! Simple, low cal, and yummy!

I just tried these for the first time and I don't regret it! So good! I got 20 servings (1/4 pepper per serving). 109 calories each, 2.7 grams of fat, 3.5 carbs, 17.3 grams of protein! I ate 4, but honestly 3 is more than enough for a meal!
For the buffalo chicken:
-44 oz of chicken breast (this was 3 large breasts for me)
-12 oz of Franks Red Hot Buffalo Wing sauce
-1 packet of hidden valley ranch seasoning mix
Add chicken and buffalo sauce to crockpot and stir so the chicken is coated.
Sprinkle the ranch packet over the chicken.
Cover and cook on low for about 6 hours.
After 6 hours, remove chicken and shred with two forks. Put back in the crock pot with all the sauce and cook for another 45 minutes or so.
Meanwhile, preheat oven to 375F
Cut 5 large bell peppers (I had approximately 1300 grams of bell pepper) into quarters and remove the seeds and other white stuff.
Lay out the peppers on a greased baking sheet.
Once chicken is done, spoon the chicken into each pepper. I used all the chicken and some peppers were pretty full! I bet you could get away with more than 20 pepper quarters, but that's a little excessive for one person living alone lol! So I stuffed them full.
Then I sprinkled a whole 1.75 cup bag of Kraft 2% cheese over the peppers evenly.
Bake for about 10-15 minutes and they are done! Super juicy and I prefer eating them with my hand like a monster rather than cutting them up!
