Me, I like a potato salad made with Greek yogurt or reduced-fat ricotta in the dressing, plus fresh dill weed, cucumber, maybe some lightly-browned leeks, freshly-ground black pepper, and of course salt.0 -

Braised potatoes with mushrooms and pulled pork. You basically pan fry them in oil or butter, then add water and let it reduce, stirring from time to time until the starchiness is released and the potatoes start to slightly fall apart but not disintegrate. You need a good amount of fat for the texture to be right, but this dish is so filling that it doesn't matter.0

Roasted potato slices- cut into 1/4" slices, spray baking sheet and slices with cooking spray sprinkle with salt, pepper, herbs or other spices to taste. Bake @ 400 F for about 20- 25 minutes turning over halfway through.

Baked potato squares, use white, russet, red or yellow potatoes. Scrub, clean and chop about 3 potatoes into squares then place in bowl with 1 tablespoon of olive oil. Stir until potatoes are coated if more oil is need add now.
for a quicker version microwave until they begin to soften approx. 10 min. Place on cookie sheet, spread them out. Spice with rosemary, garlic, onion, salt and pepper. (or just parmesan cheese) bake until soft in center. Eat hot or cold. Yumm.0 -
