So, I live in Costa Rica and chayote is always at my farmers market. I have bought it before and made soup and used it in stir fries.
However, last night I made a super easy side dish for dinner that was super low cal and delicious.
Peel your chayote, then slice thin. I used my pampered chef simple slicer on the middle setting to slice. Place in pan and brush with olive oil and salt. You can skip the olive oil if you don't want the extra calories, which I did not. Cook for 25 minutes, flipping once. Watch to make sure they don't burn.
Remove from oven and enjoy! They taste like healthy chips to me! Loved this.
