I use instant gravy. It's very low in calories. Avocado is a good sub for mayo.

I mix mayo and spicy mustard together. I don't need to use as much with the extra mustard kick.

Instead of the standard fat and flour roux I add a little corn starch dissolved in cold water to thicken a gravy or sauce when I want to save a few calories.

Use less. A portion size to fit your goals might be half or less than you are used to using. Measure/weigh it out.
Make your own gravy and reduce fat, salt.

    Salsa is lower calorie dip.

Eat more food that doesn't require sauces or condiments.

    This^

I mix mustard in too. It really cuts down on the amount of mayo I use.

If you make your own gravy or use an instant packet you can cut back on the fat. Word of warning - that's the part that makes it tastey. I just cut back on the quantity of gravy.

Lower calorie ranch - mix dry seasoning with plain Greek yogurt.
