Easy, healthy recipes for a college student?

Hello everyone! Im a senior in college trying to lose 40 lbs and become a healthier, happier me! Can anyone point me in the right direction to find some easy but healthy meals I can prepare? Thanks guys!

In a microwave-safe bowl, thaw a big handful of mixed frozen vegetables. Drain off the water, scramble in an egg, and add some seasonings (salt, hot sauce, herb blend, whatever you like). Microwave for 30 seconds, stir, and microwave another 30 seconds. Instant omelet or fritata! Serve with whole grain toast, or wrap in a whole grain tortilla, if you like.1

Do you have a crock pot or pressure cooker? They simplify most recipes. I would cook a ton of chicken on one day and then use them for recipes throughout the week

I like making taco salads. Cook up a bunch of ground beef with taco seasonings and store it in a container, then when you get hungry nuke a small bowl of hamburger mix and add it on top of some lettuce, add cheese, guac, sour cream, diced tomatos etc. Super easy if you prepare it all ahead of time.1

What do you have access to for cooking? Just microwave? actual stove/oven? Hot plate? Crockpot? that might help narrow down options for you.1

Cool. For ease on the budget, you might think about various beans... pinto, black, red beans, etc. You can make some really tasty with only a few ingredients. They fill you up, are cheap, and give some nice protein.
