Your Favorite No-cook Low Carb, Low Sugar Recipes Please!

I'm really bad about preparing lunches for work, but I do have a fridge/microwave/toaster/tiny egg skillet available to me in the work kitchen. I'm looking for healthy lunch ideas to help me stay on track at work.
Here's what I had today:
Half avocado with 2oz albacore tuna with olive oil mayo, with 1oz raw almonds and a quarter of a bell pepper on the side.
What are some of your favorites? Thanks!

A nice salad with a can of sardines plopped on top.1

I'm not a low carb'er but one of my fav snacks is cottage cheese with about 1 tsp of sugar free jello (just the powder) or more to taste. I use strawberry or raspberry jello.2

Nuts, pepprono sticks and cheese, hard boiled eggs, veggies and dip or a salad. Or cold leftovers.1

I never thought about using just the Jell-O powder as a sprinkle-on/stir-in flavoring. How have I missed that?0
