OATMEAL MUFFINS
I do not like oatmeal cooked in the traditional way so I found a recipe that I really like using oatmeal. You take 2.5 cups of oatmeal and process for about 10 seconds. To that you add 1 cup of plain lowfat greek yogurt, 2 eggs, 1/2 cup of honey, 2 teaspoons of baking powder, 1 teaspoon of baking soda, 2 tablespoons of ground flax seed, 1 teaspoon of vanilla, and 2 small ripe bananas. Mix in the food processor until smooth. You can add a few chocolate chips and walnuts to the batter. Bake for 18-20 minutes at 400 degrees in a muffin pan. They are really yummy!

Oatmeal flour can be used in cookies too. I use half regular & half oat flour.0 -
Use cooked oatmeal in muffins, makes them nice and moist.0
