I'm not certain where the Recipe's forum went, so I'll have to post this here.
I'm trying to make some meals out of a LOT of 73% ground beef that I bought thinking it wouldn't last until the end of the month. I'm looking for a VERY limited ingredient meat loaf recipe. I can't recall how my mother used to make it, but it seemed like she only used like....3 ingredients. Egg, Meat, and some kind of oats or bread crumbs type thing. Oh, and Ketchup or Tomato sauce for the top.
Does anyone have a recipe/link to a recipe for this kind of recipe?

That's pretty much it. Take your meat - add an egg and some breadcrumbs or oats for a binder - or you can even leave out the oats and breadcrumbs (I don't use them). Stick it in the pan and cook it at 350 for about an hour.
For my topping I mix ketchup, brown sugar and dry mustard - but just ketchup would work too.0 -

@Ready2Rock206 pretty much said it. I can't have grains, so I leave out the oats/breadcrumbs. Meatloaf is really simple in general, and I like to add chopped veggies and herbs in there.0 -
I make this one, but use a can of diced tomatoes instead of the tomato juice. I also sometimes throw a can of blackbeans in there. I like the oatmeal better than the breadcrumbs for texture.

I'd add some onions, herbs and bacon... and maybe some cheese and more bacon as a topping...2

I love the one off the Lipton dry onion soup mix box. Its the only kind my son will eat. Does have breadcrumbs though.1

I make one using a pound of beef, 1 egg, 1 cup of water and a box of stove top stuffing (uncooked). Then I top it with a mixture of ketchup, brown sugar and worcestshire sauce. Delicious!1

I'm a big onion fan, so I'll substitute the bread crumbs for onions sometimes, or half and half. The onions absorb some of the fat and give it a good flavor (if you like onions). I've also added other veggies, like ground cauliflower, green and red peppers, jalapenos, etc.0
