Sharing this because it is so delicious and has lots of opportunity to cut calories by subbing the cream with half and half or some alternative and low calorie cheeses and whatnot. This was amazing. Keep in mind, pre-grate the asiago. Took me AGES.

A great way to make creamy cheese sauces with no flour and little milk/cream is to make them using sodium citrate as the emulsifier. Works like a charm with high quality Parmesan for Alfredo that does not break the calorie bank because only a fraction of the amount of cream traditionally called for is required.
I've found (so far) the ratios hold pretty consistent from cheese to cheese:
