Lunch Ideas

Hey everyone I am looking for some lunch ideas for work. I am trying to stay between 400-500 calorie. I do not like salad but love fruits. I have been eating a turkey sandwich on wheat bread with apples and grapes for the past two weeks and can't stand it any longer! Anybody have any good suggestions that don't include salad or lettuce? :) Thanks!

    How much do you hate salad? Do you like any of the ingredients? Maybe try a "waldorf" salad which has apples and grapes. Here is a good recipe.

    For the salad
    ½ red apple, sliced
    ½ stalk celery, chopped
    100g/3½oz cooked chicken, chopped
    50g/1¾oz walnuts
    handful fresh rocket
    For the mayonnaise dressing
    2 free-range egg yolks
    1 tsp Dijon mustard
    290ml/10¼ fl oz vegetable oil
    1 lemon, juice only
    salt and freshly ground black pepper

    Do you like things like brown rice/quinoa/cous cous? You could try a brown rice salad with brown rice, chicken, chopped apple, raisins etc. Make it kinda "moroccan". How about wholewheat pasta with some veggies? lots of ideas out there! If you just google "4-500 cal recipes" you''ll find lots of good things!

    OMG.. I go through those phases! I brought ham and provolone roll ups (no bread) to work for 2 weeks and now I can't even look at ham! I don't prefer salads either because they don't quite fill me up enough for lunch, I like them as a small side addition to my dinner.

    I typically have one frozen low cal entrée a week (I know I know, horrible but I watch the sodium intake when purchasing them) Other than that, I bring portioned leftovers. Lately, I've been buying the Perdue Simply Smart lightly breaded chicken nuggets, cut them in half, toss them in a little bit of buffalo sauce and have that with 1/2 cup of mashed potatoes and a 1/2 cup of veggies (I'm addicted to mushrooms right now). Cereal loaded with fruit is another one of my favorites for lunch! Quick and easy!

    How about a Italian sausage wrap.

    I made this for my dinner and had the leftovers for lunch. Each wrap contains 1/2 Italian sausage link cut in to about 1/4 inch disks, a bit of butter, a small bit of white wine, a clove of garlic minced, a bunch of onions and peppers, and for the wrap a low carb tortilla. I had 2 wraps and it came out to about 570 cal but you could loose the tortilla wrap for lettuce and drop it by 160 cals. I used the recipe as a base from

    I like my onions and peppers really soft so I did cook them longer then specified in the recipe. I am sure you could add a yogurt or a side salad for a little more substance. I will say the sauce from the sausage links fat, garlic, wine, and butter made it just that much better and my kitchen smelled great. If you are worried about the alcohol from the wine most of it is cooked out you probably have about the same amount of alcohol from using mouthwash.

    I cook in bulk - my normal lunch is mashed sweet potatoes (made with milk and butter), grilled chicken breast and steamed broccoli and green beans. If you bulk cook you can eat it for a week and then change it up for the following week. I have pictures in my profile if you want to see the various things I've made.

    If you like yogurt (specifically Greek yogurt), a good combination I have found is fruit (multiple varieties - whatever kind you may like) mixed with Greek yogurt and granola. Depending on the fruits, it usually falls between 200-300 calories. Pair that with 1/2 a sandwich or a wrap, and you're in your 400-500 calorie range.
