Asian Cucumber Salad recipe!

Hi lovely friends! Today I was craving the marinated cucumbers you get a sushi restaurants. The cucumbers are thinly sliced and marinated in a sweet and tangy dressing. Thought I'd share my recipe, this is a great side dish or a replacement for rice! I like mine with some baked tofu on top.

1 large cucumber, thinly slice (mandolin or grater are the easiest!)
2 tablespoons Vinegar (Apple, rice or white work best)
2 tsp Sesame oil
Chili flakes to your desired heat
1 tablespoon Sugar (i used honey, but feel free to use agave, white or brown sugar, just anything to balance the sweetness)
1/2 Red pepper, finely chopped
1/4 of a red onion, finely chopped (sub white onion (1/6) or green onion (1/4) if you don't have red!)
Salt and pepper to taste

Steps:
1. Grate or thinly slice your cucumber. You want them to be thin enough that they are bendable. Add to a plastic, clean tubberware.
2. Dice your onions and red pepper and place into tubberware.
3. In a separate small bowl, combine vinegar, sesame oil, chili flakes, sugar of your choice and salt and pepper. Mix well.
4. Coat marinade all over mixture and mix up. Place in the fridge to marinate for 15-20minutes.
5. Once time is up, plate up! Feel free to pour the marinade on top or save it for a salad dressing!

Note*** this is extremely customizeable. If you like more tang, add more vinegar and if you like sweet add more sugar! This is a great low carb side.

    I'm making this. Sounds so good! Something similar that my family loves is radish salad. I slice the radishes thin on a mandolin, then salt them and let them sit for a few minutes (this draws out some moisture and makes them super crunchy). Then I toss them with rice vinegar and a little sesame oil.
