Have you done it? If I make some on Sunday and refrigerate them, will they still be good on Friday? Do you just microwave it to heat them up?

Thanks!

  • That seems on the long side for me--with eggs anyhow. But I have never attempted it.

I'll usually eat frittatas (like quiche without crust) for 3-4 days after I make them. They start to get a little weird beyond that point.
I eat them at room temperature or set a slice on a paper towel and microwave for about 45 seconds. Microwaving for a long time can make them a little rubbery.

I have never attempted this, but since you can get a lot of egg-based and omelette-like products in the frozen section that are good for months on end, maybe freezing them would work.

I've never prepped them like that before.

I often beat the eggs and milk together in a jar with a knob of butter the night before then just fry on the morning.

I do egg muffins. They last all week. Basically is an omelet made in a muffin tin. I loosely use this recipe and just throw in whatever sounds good:

How long are these good in the fridge for? I think these will be a hit with the kids too :) Thanks for sharing!

Yeah, this is what I was thinking. I've never done it either, but I can't imagine why it wouldn't work. Wrap it in wax paper and then put it in something air tight (freezer bag, freezer storage container) so it won't get frost on it (which will make it soggy when you reheat)

I usually prep everything that is going to go in the omelette so have my ham chopped, mushrooms etc etc so all I need to do is scramble the eggs and throw everything else in. OR the egg muffin idea is great
