    I follow her blog and social media.. great gal! I love her site because its everything you need about slow cookers on one site. I live alone, so the meals, i make I freeze part, use it lunches and other dinners. It's great.

    This was my dinner tonight!
    Crock pot potato soup
    2.5 lbs potatoes diced into 1/2 in pieces
    1 small yellow onion diced.
    4 cups chicken broth
    1/2 tsp seasoned salt
    6 cloves garlic whole and peeled
    1 bay leaf
    1 block low fat cream cheese
    Bacon, chives, and Cheddar cheese for topping

    Put the potatoes, onions, seasoned salt, and broth on the crock pot and stir. Place the garlic cloves on top and stick the bay leaf into the soup. Cook on low 10 hours or high for 5 hours. Remove the garlic and bay leaf. Remove about 1/2 of the soup and mash the potatoes. Return to the pot and add the cream cheese. Prepare the toppings while you let the cream cheese combine. Its high in sodium but so tasty for a cool night. Even my picky husband loves it. Makes anout 6 servings.

    My family loves slow cooker chicken tacos... I use a 3 lb bag of boneless, skinless chicken breasts (usually frozen when i put it in), your favorite taco seasoning, and a medium jar of salsa. Cook on low 4-6 hours and then shred with forks. Delicious! I love it on top of my salad.

    I did crockpot cheeseburgers last night - holy crap they were awesome!!!

    1.5 pounds ground beef (93/7)
    Sea Salt (to taste)
    Black Pepper (to taste)
    Garlic Powder (to taste)
    Ritz crackers (about 8) (crushed up into bread crumbs)
    2 Garlic Cloves (finely chopped)
    4 TBSP 2% Milk
    8 oz. Velveeta Cheese (I couldn't find any light - so I used regular)
    1 TBSP Sweet Relish
    1C chopped onions (I use sweet vidalia onions)


    Step 1 - Brown your ground Beef.
    Step 2 - Layer bottom of Crock-Pot with Ground Beef.
    Step 3 - Add Salt, Pepper, Garlic Powder and Milk
    Step 3 - Add chopped onion (spread over mixture evenly), garlic cloves and relish.
    Step 4 - Add Velveeta Cheese sliced into cubes on top of mixture - separate evenly on top.
    Step 5 - Add Crushed up Ritz crackers by sprinkling all over top of mixture
    Step 6 - Cook in crockpot on 1.5 hours on HIGH.
    Step 7 - Mix everything together.
    Step 8 - Cook an additional 15-30 minutes on HIGH.
    Step 9 - Serve over 100 calorie bun of your choice.

    Yields: 8 - 1/3C servings
    Estimated: 201 Calories + 100 Calorie bun = 301 Calories

    OR

    Spread over Lettuce and use Ketchup & Mustard as dressing!!!! (It's fantastic!!)

    Thank you so much! I used a couple vegan alternatives to make this and it turned out PHENOMINAL!!!!!

    Not a recipe but an idea....If you have a World Market in your area they sell some amazing slow cooker/dutch oven boxed ingredients with the recipe on the back.

    Here's some of my favorites:

    Buffalo Chicken
    3 boneless skinless chicken breasts
    3/4 cup nonfat Greek yogurt
    1/4 cup franks red hot
    Garlic powder
    Diced onion

    Put the chicken in bottom of crockpot. Mix everything else together and pour over chicken. Cook on low 8-10 hours. Shred. I eat the chicken in a romaine heart wrap or over a salad. Top with blue cheese.


    Shredded chicken tacos
    3-4 boneless skinless chicken breasts
    1 can black beans
    1 can corn
    Taco seasoning (I make my own but you can use a packet)
    Salsa

    Put chicken in bottom of crockpot. Sprinkle taco seasoning over it. Pour drained beans, corn, and one jar of salsa over the chicken. Cook 8-10 hours. Shred chicken. Serve in tortilla shells and top with cheese, sour cream, etc

    Chicken stronganoff
    3-4 boneless chicken breasts
    8ounces sour cream
    One can mushroom soup (condensed)
    Dry onion soup mix (make my own)
    8 ounces fresh mushrooms

    Cook 8-10 hours on low. Shred and serve over noodles, toast or baked potato.

    CROCK POT CHICKEN TACO CHILI

    The perfect slow cooker dish because you just dump all the ingredients in, turn it on and come back to the best tasting meal!
    INGREDIENTS:

    1 small onion, chopped
    1 (15.5 oz) can black beans, drained
    1 (15.5 oz) can kidney beans, drained
    1 (8 oz) can tomato sauce
    10 oz package frozen corn kernels
    2 (10 oz) cans diced tomatoes w/chilies
    4 oz can chopped green chili peppers, chopped
    1 packet reduced sodium taco seasoning or homemade (see below)
    1 tbsp cumin
    1 tbsp chili powder
    24 oz (3) boneless skinless chicken breasts
    1/4 cup chopped fresh cilantro
    To make your own taco seasoning, omit the packet, cumin and chili powder above and use below instead:
    1 1/2 tablespoons cumin
    1 1/2 tablespoons chili powder
    1/4 teaspoon garlic powder
    1/4 teaspoon onion powder
    1/4 teaspoon dried oregano
    1/2 teaspoon paprika
    1 teaspoon kosher salt
    1/2 teaspoon black pepper
    DIRECTIONS:

    Combine beans, onion, chili peppers, corn, tomato sauce, diced tomato, cumin, chili powder and taco seasoning in a slow cooker and mix well.
    Nestle the chicken in to completely cover and cook on LOW for 8 to 10 hours or on HIGH for 4 to 6 hours.
    Half hour before serving, remove chicken and shred.
    Return chicken to slow cooker and stir in.
    Top with fresh cilantro and your favorite toppings!
