1) It's not an on/off switch, it's a gradual process. Just as we fluctuate daily between lipogenesis and lipolysis, we also fluctuate between anabolism and catabolism. There are too many variables to give an intelligent answer to the question; nutrition, size of deficit/surplus, training status, efficiency of training routine, protein intake, hormone levels, etc., etc.
2) In the long term, the answer lies in your genetics. For some people it happens fast and big; for others, it happens slowly and not as much. For some, it barely happens at all. I read something about non and slow responders and genetics and cried tears of relief. I've been lifting two years and have had almost no strength gains at all. Well, it feels like almost none, but I have made some small progress. Upper body is sad, and very, very slow, though.
I still lift for joint and bone health, but until I learned about that... damn was it frustrating.

My eggs, especially vary greatly. One Trader Joe's jumbo egg should be 63g. I don't think I've ever had one be that size. They've all been 1.2, 1.5, etc. Several were the equivalent of two eggs.
She's in a healthy weight for her height. The weight will come off slowly. For me, the detailed logging helped. Maybe it'll help OP.

Ok, a brief primer on egg sizes. You generally have sizes like small, medium, large, and jumbo. Each has its own weight range which really is not that big, however, realize something Jumbo is any egg above a certain size. Thus, you will find a huge amount of variation in Jumbo eggs because they are anything above a certain weight, not a certain weight range. The OP eats medium eggs, so they would fall into a limited size range and would all be about the same calories. If the OP wants to weigh then, it would be fine, but I personally would not.
Having said that, the OP would probably be better served by not concentrating on the scale as that will move very slowly. Rather they should concentrate on how they look and body measurements taken at monthly intervals. Do a good progressive resistance program, and there will be progress that may not really show on the scale.1
