There are a lot of foods that you can eat or drink. Meats (fatty cuts especially), dairy, fruits, veggies, oats/quinoa/rice, potatoes, etc...

Some oats contain gluten but most supermarkets stock gluten free varieties.
I'm not celiac but do limit my wheat intake as I have IBD and find that wheat aggravates the symptoms. So I aim for 3 or 4 wheat free days per week (I know gluten is present in other grains too )On those days I eat porridge, potatoes, quinoa and rice for carbs.

You only have to stay away from 2 food groups: wheat and gluten. The main difficulty for Celiacs is cross contamination with other grains Like oats, so read the labels. Luckily, the are plenty of foods such as meat, eggs, seafood, nuts, seeds, legumes, vegetables from Leafy greens and carrots to starches (potatoes, sweet potatoes, yams, yucca), fresh and dried fruits, whole dairy products...you'll be surprised with how much you can eat :)

To gain weight you need to be in a surplus, eat more than your TDEE and you will gain.
