Pork loin roast

Thinking of smoking it. Any ideas for a healthy meal?

    I smoke pork tenderloin all the time. I roast green beans, halved cherry tomatoes, onion wedges and jalapenos. I don't eat them, but I usually serve some kind of rice, quinoa or potatoes for my husband and son along with the green beans.

    I love tenderloin with a large side of roasted or sauteed Brussels sprouts or winter squash and root vegetables, the whole thing lightly drizzled with a balsamic reduction. PERFECT fall meal!

    I like a good sweet potato/carrot/rutabaga mash (peel, boil, mash with milk and a bit of butter like you would regular potatoes) with pork loin roast. Then a nice salad or some steamed veggies, whatever you like. Another thing I do, is sometimes I will chop celery, carrots, onion, potatoes and Brussels sprouts and stick 'em in the pan with the roast - drizzle a little soy sauce or balsamic vinegar and sprinkle on whatever seasonings smell good that day to make it extra special.
