Mediterranean Salad with Tzatziki dressing (for those low-carb days)

Hi guys!
Back with another recipe. I had this salad at SweetGreens in Los Angeles and absolutely fell in love. Feel free to modify this version to add anything you like and take out what you don't! What I will say is that if you don't like kale, you can switch this out for dark green romaine but honestly you barely taste the kale, only crunch! It's a great way to get those leafy greens in.
Calories: 495-560 depending on ingredients
Salad:
2 cups kale
1/4 cup red onion
Cucumber slices (8-10 for me)
Tomatoes (cherry or heirloom work best!)
1 whole lemon squeezed (over the kale)
1 dollop of hummus (any kind ya like! I used spicy)
Optional salad ingredients:
Feta cheese
Breadcrumbs
Protein of your choice (I used baked tofu in the picture but feel free to use whatever you'd like!)
Tzatziki dressing: (I personally don't digest dairy well, yogurt being one of them so mine is yogurt free/homemade. If you'd like to buy store bought or make it with yogurt please do!)
1/4 of a cucumber, grated
1 1/2 tablespoons of tahini (I used the Trader Joe's refrigerated version)
1-2 teaspoons of white vinegar
Dill, garlic, parsley and salt and pepper to taste (I added dried herbs, but I'm sure fresh would be even better)
1. Massage the kale by squeezing a whole lemon and add some salt into a bowl and mix and massage the kale with it. The longer you massage and mix the softer the kale will get. I did mine for about a minute because I like some crunch.
2. In a small bowl, grate the cucumber making sure to get all the juice and pulp. Add tahini, vinegar and spices and mix well. Taste and add more of the ingredients if necessary.
3. Chop up the rest of the veggies (onion, tomatoes, cucumbers) and add to the salad bowl.
4. Drizzle dressing over the salad (I had enough for about 3-4 tablespoons)
5. Add a dollop of hummus on top of the salad and combine until well mixed.
