I'm not sure what you mean. Have you not eaten at all and you are going to have trouble fitting that number of calories into a short period of time (before bed?) You can always carry some over to tomorrow if that makes it easier.

    Eating 2700 calories is a problem? That's easy :)

    Shakes, pizza, ice cream, yum.

How is that difficult when you're a chef?

Rack of ribs and a slab of cheesecake will cover most of it?!

What about a roast chicken and a salad with creamy dressing on the side, followed by a mass gainer shake?

You should not eat back all of your exercise calories. Also, unless you put sedentary as your activity level at the beginning, you are probably double counting some of those steps, because it would have factored in some level of activity during the day. You would also lose the weight more quickly. As a chef, are you making sure to count all of the things you taste during the day? I have worked alongside some restaurants and they calculated that the person that did the tasting for just the day's prep consumed about 2000 calories!

If you really do need more calories, I would look at adding potatoes (white, sweet, etc.) and rice. You could also eat higher fat foods that are healthy like avocados and coconuts.
