Searching for a new path in my weight loss

OK, I'm a 57 year old male 6' 4" , today 280.2 lbs. A brief summary , 3 years ago I weighed in at 350 lbs, had the sleeve procedure in March 2014. My meal portion size were volume 4 Oz's . After recovery time, I started going to the gym. Eating use to be pleasurable for me, but became very unpleasant for me. My apatite increased, so my meal portion size slowly increased. So, over the last year my lowest weight has been 265 lbs and highest 295 lbs My waist size were 46, but now 42. I have had 4 back surgeries and 2 years out from my last surgery. I have been on pain pills morphein for 15 years. I have been off them for 18 months now and do not plan to go back to them. Saying that, I am planing to go back to the gym. I start a low carb diet max 75 grams/day and calorie goal 2000, but been averaging out about 1500 for the week. I started this on 10/26/16. The first 10 lbs in the first 2 weeks fell off great. The next week rollercoaster 281- 279 ,up and down. My goal is 250 lbs and to tone up and build muscle mass. Any advice deeply grateful. Thank you
