you can make majadra with them, which is essentially rice with lentils and friend onions. you can replace the rice with quinoa or bulgar. just cook each ingredient separately (lentils need a 30 mnts soak in water and then you can boil them until they're soft). fry/sautee some onion until golden brown. then mix the prepared rice, lentils and onion together. add some salt and pepper and you have a very filling dish.

another thing you can make is lentil soup (not sure you wanna do that in this heat). basically, just sautee some onion and carrots, add the lentils and some diced tomatoes + tomato paste and water. add some salt and cumin and a bit of sugar (because of the tomatoes). bring to a boil and lower to medium heat until everything's cooked. when it's all ready, add some balsamic vinegar to the pot (upgrades the soup amazingly) and serve.

Silly question do you have "green lentils" or "french green/puy lentils" I'd treat the two differently.

French green are great cooked with carrots, onions, garlic and a few herbs. A classic french recipe goes well with duck and chicken.
