Anyone want to share any recipes. Here is one of my favourites. Can't claim the credit as someone sent it to me along with a pdf file of over 100 recipes. If anyone would like a copy feel free to message me and I will email them across.

Crockpot Chicken Tortilla Soup #2 (3 Points)
16 Ounces Chicken Breast Halves Without Skin – cubed
30 Ounces Black Beans, Canned – undrained
30 Ounces Mexican-style Stewed Tomatoes – canned
1 Cup Salsa
4 Ounces Chopped Green Chiles
14 1/2 Ounces Tomato Sauce
2 Cups Reduced Fat Cheddar Cheese
Tortilla Chips
Combine all ingredients except cheese and tortilla chips into slow cooker. Cover and cook on low
8 hours. To serve, put a handful of chips into each individual bowl. Ladle soup over chips. Top
with 1/4 cup cheese.
Per Serving (excluding unknown items): 248 Calories; 4g Fat (13.2% calories from fat); 25g
Protein; 27g Carbohydrate; 9g Dietary Fiber; 32mg Cholesterol; 1215mg Sodium.
Serving Ideas : Would be good with a dollop of sour cream too.
Might also add minced garlic and cilantro to soup. Could use Monterey Jack cheese instead of
the Cheddar.

    I make chicken cacciatore in my crockpot. It means hunter chicken, so basically it is what ever you want to put in it as long as dark meat chicken, wine and tomato sauce are included. I make mine with white wine, mushrooms, bell peppers, chicken thighs, legs and sometimes zucchini or yellow squash, fesh green beans and onions ( of course washed and cut up). The trick is to take the skin off the meat.

    Other than that, veggies in first, meat on top and 1 can of sauce plus 2-3 cups of wine. 8 hours on low and you are done.

    If I use frozen veggies, I put them in when I get home.

    Glad there is a crockpot thread again. I'd be lost without mine.
