So if I have a weak MCL, and am doing exercises to strengthen it, will I not be able to gain muscle because I'm in a deficit? How does this work? Should I be eating at maintenence instead?

You can make strength gains. Strength gains are not the same as muscle gains. muscle gains are not required to correct weaknesses. So no, you don't have to eat at maintenance to increase strength. There will be a limit to how much strength progress you make eating at a deficit but cross that bridge when you come to it.0
