How long does it take for your body to lose the water weight it gains from starting a new workout (lifting) program?

Couple of weeks usually, but depends how long you get DOMS for?0

I don't understand what all the fuss is about water weight...
In my experience, it never really goes away...you just have a new baseline. If you're training, you're going to retain water...2 -
You will lose/gain water weight everyday.. not just exercising.. water weight is part of your weight, so its really there everyday..3
