Cookbook for one/two pot vegetarian dinners

I hate doing dishes. I really really hate doing dishes. The last time we ate vegetarian (which I like) I filled up three drying trays and the dishwasher due to the shear number of pots, pans, sheets, and bowls used to cook it.

So, does anybody have a recommendation for a one/two pot vegetarian recipe book? Eggs and dairy are fine. Fast time to table is desired.

    Do you have a Pinterest account? There are a ton of recipes for every dietary need or desire on there! I love it!

    I am not sure how many pots and pans the recipes in this book uses. I bought it for my son last year and he likes a lot of the recipes. Eat Your Vegetables: Bold Recipes for the Single Cook By Joe Yonan

    Last night we had a one-pot vegetarian meal: brown rice risotto with shallots, garlic, dill, peas & feta. The resulting dirty dishes were: the two re-usable containers from the frozen chicken stock, a measuring cup for the rice, a cutting board & knife, a spoon and a covered pot. Everything went in the dishwasher except the pot.
