Anyone have any healthy dishes they like to make for Thanksgiving? Any desserts?

A clafouti is a relatively healthy dessert and easy to make. It's basically fruit baked in a thin, lightly sweetened batter. My recipe for one is here: http://www.justapinch.com/recipes/dessert/fruit-dessert/cherry-clafouti.html?p=1
Although the recipe is for a relatively small one in a skillet, you can easily double it and cook in a rectangular baking dish.1 -

I will be making tex-mex spaghetti squash this year, it's delicious and very beautiful and festive looking dish. As a variation of tex mex, stuffed zucchini or yellow squash boats. Looks great, and soooo good. Pies for dessert for me,1

Pick up any year's issue of Cooking Light for November. Tons of ideas, awesome food. I don't try to make every dish into a lower fat/calorie dish, but it's nice to have 1-2 that I know aren't loaded up on things I don't normally use so much of.1

we don't mess with thanksgiving. Every dish is a tradition. There can be no messing with it. My way of dealing with it is to only do it one day. Not the whole 4 day weekend. I will eat tons of leftover turkey but I'm done with stuffing and gravy after the big dinner!2

I love those things. I've made this one https://lapetitepaniere.com/2013/12/30/apricots-clafoutis/ with peaches twice and it's really tasty. I used 1% milk and you could never tell.
Skinnytaste has a recipe for a pumpkin one too.
Personally, I just make lower calorie mashed potatoes (1% milk, only a bit of butter) and avoid adding sweeteners in sweet potatoes, but I don't really change anything else. I wouldn't mess with desserts either way... it's really my favorite part by far about Thanksgiving food (I could really do without all the other stuff).1
