My new favorite thing around the holidays is pumpkin mouse that taste just like thanksgiving with less calories. This makes enough for about a weeks worth of desserts. I put mine in medium mason jars for a meal prep or to give to my kids for healthier option of dessert. But its amazing.
1 small can of pumpkin
2 cups whip cream homemade if you can
2 packets of vanilla pudding
2 cups milk
2 tblsp cinnamon or as much as you like
1 tblsp nutmeg
Make pudding mix and milk in one bowl
Mix pumpkin and spices and whip cream in another bowl
Then combine bowls
Mix all together
And enjoy
Last for a week in fridge

I think you mean Mousse as I had pictured a cute little Thanksgiving mouse-you know the kind with a tail!

As for less calories-really with all that full fat whipping cream?
How about just making a pumpkin pie without a crust. Pumpkin, eggs, evaporated milk and some sugar(plus the spices)-the recipe is often on cans of pumpkin. It much healthier than the variation you suggest.
