I am a plain foods kind of person, for the most part. When I cook stuff in the oven, I use parchment paper so I don't even need oil. At most, I'll use hot sauces or some of the various Walden Farms dressings on meat.

With that out of the way:
Baked swai...literally, just the fish, baked at 425 for 30 minutes.
    Chicken thighs, same as above.
Baked chicken tenderloin, same thing but for 25 minutes and add a couple of ounces of water to the pan to keep them from drying out.
    Hard-boiled eggs.
    Tuna.
    Steamed or precooked/frozen shrimp.

One thing that I do put some (minimal) effort into is a weird *kitten* microwave frittata that I came up with:
    200g southwestern Eggbeaters
    190g tuna
    30g jalapeños
    28g mozzarella or cheddar cheese
Microwave Eggbeaters tuna and jalapeños together for two minutes, covered. Stir to get everything mixed together, as some of the egg will have started to cook thoroughly. Recover, zap again for two and a half minutes. Toss some hot sauce on top and go at it.

I've also made it using 120g shrimp and only 90g tuna and it's an awesome addition. Have also replaced all tuna with chicken tenderloin, and while it's even more delicious, it ends up lacking a little bit in volume.

My go-to foods (I'm a fairly simple eater too):

Eggs, any style (usually over easy or scrambled)
Berries with heavy cream or full fat Greek yogurt (a sprinkle of cinnamon makes it off the hook)
I like to dip chicken thighs in melted butter and dredge in grated Parmesan, bake at 425 F until golden (30 min or so)
Tuna salad, with or without lettuce leaf "wraps"
Throw cheap cuts of beef or pork (or chicken) in a slow cooker with a jar of salsa; serve atop a green salad with some guacamole and shredded cheddar
Snacks are generally almonds or cashews and good cheese or dark chocolate

My tip - if you are thinking of trying low carb, don't be afraid of fat! Trying to do both low carb and low fat at the same time can easily trip you up.
