Great appetizer or quick snack

My wife first found this on Pinterest. We both love yellow squash and zucchini. Use either or both. Slice thin using a mandolin. Cover baking sheet with parchment paper. Arrange slices on paper, drizzle with small amount of olive oil. Put a good punch of shredded Parmesan cheese. Bake at 400 for 12-15 minutes. You can also put a single piece of pepperoni on some of the slices then top that with cheese.

A QUICK SNACK: I am all about 2 handfuls of bean sprouts, 3oz of roasted chicken breast and the juice of one whole lemon. Toss and eat.1

The squash recipe sounds amazing. I LOVE yellow squash and eat it daily.
Here's a handful of appetizer recipes I've made lately. The cauliflower recipe & potato bite recipe are the only 2 of the 6 that are lower in calories per serving. These are vegan but could easily be made with meat & dairy.
