Crockpot Recipes Sans Meat

I am brand new and learning about the MFP community. I'm here because I have very poor eating habits! I'm very, very lazy when it comes to cooking; I eat SO MUCH pasta and french fries!
I've used the search feature for crockpot and vegetarian recipes... There isn't a lot of overlap! I'm looking for some nutritious recipes that are FILLING. If you have any, please share I don't care if you're vegetarian or not!
One I have is:
Red Pepper Black Bean bisque (Campbell's brand or whatever you prefer)
Quinoa (Must be made before going into the pot)
Diced tomatoes
Kidney beans
Veggies of your choice
Let it simmer for a while - I think I let it sit for 3 hours - so that the flavours mix together. Serve! (With lots of cheese on top!!!) The next time I make it I'll probably add tofu to make it more filling and let it sit longer so it absorbs more flavour.
Quinoa is high in protein and fibre, and it doesn't taste like very much, so I encourage everyone to try it! I also encourage adding hemp seeds to your recipes (from cereal to salad to pasta sauce). Tofu noodles are a low-carb alternative to pasta and rice - you can slice it, dice it, grate it.
