Low glycaemic for dummies, with a big but

I have the feeling I'm reacting quite extremely to carbs, similar to reactive hypoglycaemia. Long-term sugar test two weeks ago was within the reference range, slightly on the low side. I thought lets try not eating carbs, or at least low-glycaemic carbs tomorrow and see if that makes a difference to how I feel at the moment. I'm only having a couple of problems with that:

1. I don't digest fats well. Basically, they keep me hungry, and if I go over 30-40 grams per day they come out on the other end again
2. I hate peanut butter and even the smell makes me gag. I don't like eggs, am allergic to walnuts and very slightly allergic to other nuts and almonds, same with not yet yellow to brown bananas
3. I'm on an extremely tight budget and can only buy what British supermarkets offer. But I can't afford to have a chicken breast several times per day.

Thus, any idea what I could do tomorrow? I still have skyr in the fridge, deep freeze broccoli and cauliflaur, bread (wholegrain and fairly high in protein, but I want to try something else tomorrow), ham slices, onions.
