Quick and easy vegetarian protein lunches on the go?

I'm always on the go and seem like I never have enough time in the mornings to properly cook a lunch so does anyone have any good ideas of quick vegetarian protein filled lunches? :)

    peanut butta sandwich
    cottage cheese + yogurt
    can of vegetarian chili

    Required a little prep maybe the night before?

    Spicy Chicken Boca Salad

    Lettuce of your choice
    Spicy Chicken Boca - requires heating up you could do at work in microwave but I'd grill it crispy the night before
    1oz cheddar cheese
    Bolthouse Classic Ranch Dressing or your choice of dressing
    Tomato
    Red Onion

    Depending on how many calories you want to use...
    Croutons
    Flax Seed or sunflower seeds

    A nut, cheese cub, and fruit tray
    Hummus with veggies and pita
    Hard boiled eggs with some sort of side (salad, veggies, fruit, etc.)
    Can of lentil soup
    Anything else I can think of requires prep the night before.

    Nile lentil soups...just add water.

    I had a version of this chickpea sandwich on Dave's good seed bread for lunch. Yummy and filling. (400 cal with 19 g protein)

    I also take left over homemade lentil + veggie soup from dinner if you have access to a microwave. If not take a soup thermos. (200 cal with 7g protein).

    Home made black bean + salsa burritos on sprouted grain tortilla. (200 cal with 8g protein).

    Instead of chips, I am starting to eat Harvest Snap Snapea Crisps as a side (5g protein).

    Add a cup of soy milk if you like (7g protein).
