Parsnip puree oooooh so good
This is brilliant to add a "wet" element to a meat dish without using gravy. It's super yummy! I'm having with pork belly mmmmm
2 large parsnips
1 small white potato
1tsp wholegrain mustard
1 tsp maple syrup
30ml skimmed milk
Peel the veg and boil until very soft, pop in a mini blender and blend for about 10 secs but not till smooth, just starting to break up. Then add everything else and blend untill smooth and velvety, give a little salt and lots of black pepper. Oh so good!!
