    1.5 cups Blanched Almond Flour
    3 eggs
1 cup of milk(or slightly less to desired thickness)
Optional: spices like cinnamon and nutmeg, vanilla, blueberries or other flavors
Add a few scoops of protein powder.

Almond pancakes are usually made by high-fat dieters, whereas protein powders and baking powder makes a better base for high protein pancakes.

My protein cakes are literally nothing but casein, baking powder, Eggbeaters, and water.

90g casein of your choice (I prefer MyProtein vanilla or chocolate)
150g Original Eggbeaters (though the southwestern style make interesting sweet/spicy cakes when I am in that mood)
    1 tsp baking powder
Enough water to make the batter mixable but still thick

Whenever I try to make pancakes with any kind of flour besides ordinary wheat flour they fall apart in the pan! Any tips on what I'm doing wrong?

More egg to function as a binder.

I used to make vegan, gluten-free pancakes and the key was to combine different flours. One with higher fat content like almond, and one with higher protein content such as chickpea or soy. Then one for filler like buckwheat.
