Are you using that Kodiak mix? I have not had good luck with it, though I used it for waffles not pancakes.

Whip egg whites into peaks like a meringue, mix in casein powder, cook.

If you are using the Kodiak Power Cakes mix, reduce the water or milk by at least 1/2 c. The batter will be thicker and they will turn out fluffier.

    1 scoop kodiak buttermilk flavor

1 scoop chocolate protein powder (less calories then doubling pancake mix )

Add enough water until batter is thick and not runny

    Profit

I always made my kodiak cakes with just water, and they were good to me, but they definitely weren't fluffy. Then I put some egg white in the mix and it did the trick.
